Walking into Egg Shop on a crisp Saturday morning, I knew I was in for something special. The classic Benedict arrived beautifully plated — two perfectly poached eggs sitting atop thick-cut Canadian bacon and a house-made English muffin. The hollandaise was absolute perfection: silky, lemony, with just enough richness without being heavy.
